I have a 2005 C36 Mark 11 with an adjustable pedestal saloon table which is too low.
With cloth upholstery its very difficult to slide my legs slide across without hitting the table.
I am of average size and having looked at all the archive posts I'm surprised that no one else has reported this to be a problem.
I have removed the telescoping pedestal and note that the height is limited by the distance it decends below the floor. The internal gas strut also stops it from rising further.
I plan to raise it to the same size as the games table which is about 2" higher above the floor.
I thought I would simply make a 2" thick circular plywood base to go under the table pedestal base and fix it through the floor with some thin bolts.
I would be curious to know if anyone has a better or simpler solution.

It is just my wife and I on board our boat.So we removed the table and use just the starboard smaller table.

I made a change on Wetlands. My problem wasn't so much the height of the table as it was the difficulty in getting around to the backside. It seemed that the table was a bit too large in order to double as the basis for a bert in the setee.
After much thought I landed on replacing the standard table with a smaller sized table using a pre-made bitcher block counter top. I ordered a 24"x25" top which moved the edge of the top away 3".
The end result was a table that still functions well and allows us and guests to slide around the table omfortably. One thing to note if you change the top is that the mounting ring that sits on top of the pipe is that it is not centered on the opening. Make sure that you take that into consideration.

Thats a very interesting approach - access to the back is the main problem which would be overcome by reducing the size slightly.
I will make up a temporary top and try it.

I used the table in the starboard side-and since I allways have it down(it's my nap place) I just made a replacement from plywood.

I assume you removed the base mounting from the cabin sole also. Did that create any problems?
