Loving our new used 2005 C 36 MK II, wing keel.
The former owner equipped her with an over sized anchor and lots of chain. I estimate the anchor weighs 50lbs and is attached to maybe 200 feet of chain rhode; guessing 250-350 lbs of weight. All three water tanks are full. The boat sits about 1 1/2 - 2 inches lower in the bow. I'm assuming the bottom paint line and boot stripe are correctly positioned. My plan is to drain the forward tank to see if that helps but at 25 gallons or so- that's only about 200lbs of relief. Has anybody else experienced a similar trim issue?

I'm no expert, but I wouldn't assume that the stripes are on correctly. I only have 20 feet of chain on my 33lb anchor, plus an aluminum Fortress with 20 feet of chain. Even with the bow tank empty my forward boot stripe is only about 1" above the waterline, whereas it's several inches at the stern. The boot strip is barely above the waterline midships. I've looked at a couple other C36's in my marina during winter storage, and theirs are higher than mine.
I'm about to go to 75' of chain on my primary and expect the bow to be down a bit more; hopefully it won't put the anchor locker drain below the waterline

My boot stripes are 3" high of the water amidships and 1/2" submerged at the ends - it always looks like the boat is heeled away from you. Hazards of an early-production hull number I guess. The waterline has surely changed over the years as they add and move equipment to the standard hull design.

I had a conversation with Jerry Douglas last fall re: waterline too high on one side and too low on the other. Thought the #1245 (Fall '92) was out of trim. He said unlikely...turned out he was correct... He did suggest that it was possible that the stripes were not laid correctly into the mold.
Could be the same here....especially the hump midships.
