The question is whether I can just go ahead and change it. My guess is that all the new oil is in the pan and that all that should come out, when I spin the filter off, is what was in there from when I drained it.
I am certain that I am not the first to have done this. :)

You are correct and can change the oil filter exactly as you describe. No new oil will come out and any oil in the filter is old. There will not be much anyway as most of the oil in the filter drains back into the engine when it is shut off.
