I am about to attempt installing a new stainless steel exhaust riser on my M35. My question is do I have to use any type of pipe thread coating on the riser threads or elbow threads?

You should use teflon plumbers tape on the threads. Since you want the seals extra tight, you should consider something like Real-Tuff in addition to the tape: http://www.homedepot.com/p/Hercules-1-2-oz-Thread-Sealant-156052/100184716
