Throttle adjustment?

When we bought our boat, the plastic throttle and transmission handles were badly oxidized and getting brittle.  I replaced them with shiny new stainless ones from Edson, and they look great and have a much firmer feel.   The shifter works great, but the throttle now hits the pedestal guard before it gets to wide open throttle (we don't cruise at WOT, but occasionally it's desirable to "oomph" her up).  Anyone ever dealt with this?  Is there an adjustment I'm missing somewhere without throwing the idle setting off?  Long term plans include a new pedestal guard that lays forward and should be out of the way, but in the meantime....

here is a link to the Edson manual describing the adjustment you can make at the pedistal.  depending on which engine you have it may be easier to make the adjustments down at the engine - you'll just need to reference the correct enginge manual in the members section.
