According to Catalina Direct the varnish used to finish down below in a 2005 is/was: Varnish, Semi-Gloss Interior 2001-2007. I am assuming this semi-gloss was used on bulkheads and flooring. The cabinetry, cabin ladder, tables appear to be have a higher gloss finish. Any info on this?

I recall seeing something on Catalina Direct in the past year or two that claimed to be the originally sourced varnish used by the Catalina factory. I believe they had certain finishes that were tied to certain model years.
