Sturctural integrity - bulkhead under and forward of oven

I'm looking to move the water tank manifold to the small box shelf under the oven, just like illustrated and discussed by Bruce Landsberg. https://www.catalina36.org/members/technical/upgrades/plumbing-system-makeover
I have a question regarding the bulkhead he drilled for the fresh water lines.  The bulkhead is located under and forward of the oven.  Is this a structural supporting bulkhead?  Instead of drilling 4 separate holes, I was thinking of drilling 1 - 2 1/4" hole, and putting a 2 1/4" hose (of the same construction but heavier walls as the fresh water lines), and use this large hose for chafe protection.
Any comments, concerns, or recommendations are greatly appreciated.

Replying to my own post.  The bulkhead in question is an athwartship bulkhead.
