I have a Seaward hot water heater that heats by electricity and by engine coolant....I recently had the thermostat and heat exchanger off of the engine. Since then the heater only works with electricity and doesnt seem to be getting heated from the engine.....the engine is running at the proper temp (160ish) with no sign of overheating and I'm assuming the coolant pump pressurizes the heater circuit as well.....any ideas?

Did you check to make sure the two little lines coming out of the top of the engine at the thermostat housing that feed into the big lines that go to the water heater are connected still? Possibly your mechanic had them off and bypassed them to bleed the engine and didn't reconnect them. You may also have had an airlock in the engine cooling system that got into the lines to the water heater, if so it will need to be bled some more. It can be tricky to get all the air out of the engine cooling system, as opposed to the raw water side which usually never air locks.
