what type of sailing are you doing?

if you are like most of us, for pleasure, coastal NOT RACING, just looking for a great sail at a great price I would recommend Rolly Tasker Sails, my boat came with them (a former charter boat, rode hard and put away wet it’s whole life), they were well used when I got it and I still got 4 years more use out of the main, the Genoa is still going though I did have to resew some of the UV protection last winter. 

I liked them so much I became a rep for them.

I sail with North since years. Last fall, we order new main and genoa, cloth Npl tour, very light and performing extremely well.
Saying that, we use to race quite a lot, if not your case, probably you can go for a lower North cloth. Their new product 3di Nordac, using their 3di technology but with Dacron, is quite impressive at a competitive price.

We have ordered new sails from Mack, but they won't be here for a few more weeks.  My recommendation is based on my research not experience.
 
There are different grades of sailcloth, and if the price quoted is really low, you are probably getting the cheapest grade. Mack was a bit higher than the least expensive sails, but the sails are made with a high quality cloth.  I liked that their sails are made here in the USA.
 
Local sailmakers want to come to your boat and take required measurements, then charge accordingly.  That seemed unnecessary because the measurements are known. The prices that I saw were really high.
 
People with whom I have corresponded really like their Mack sails, but I found that to be generally true of people who bought elsewhere.
 
There is a fellow Catalina owner who sells for Mack, Chic Lasser <chiclasser1@yahoo.com>, who has been very helpful.  He is knowledgeable, generous with his time, and I think that you will find that his prices are better than dealing directly with Mack headquarters.  I recommend that you email him and then talk to him on the phone.  He'll give you an education, and if you buy from someone else, no harm done.  He has a little wiggle room on the price so get the quote from him before going to Mack headquarters because he won't bid against them.
