I bought a Groco K head not long ago thinking it would solve the "head" problem. I was very impressed with the quality as I rebuilt it completely. The tech service people were very helpful. Of course Dummy Me did not think of measuring the height first! It is 4" taller than the "compact" size made for the boat. I really want to use it and would like to cut down the molded pad that is there. Has anyone done this? It does not look too complicated.

Seems like a major project. You could probably return your K model with a restock fee, or sell it on Ebay, and have plenty of money left to buy the lower cost HF model.
When I replaced mine a couple years back the Rartain was the most highly rated. Works well, but the handle gets in the way. I suspect any of the level handle types are going to be a pain and the push/pull pump will fit better.

Don't forget that the hull is curving beneath that raised head platform. While it might be 4" high at the front, it meets the hull at the rear edge. So IMHO, even if you were to cut it down, you'd probably not gain very much. I'm not certain of the structure, but you could probably get an idea by removing the head and sticking something like a metal coat hanger down the bolt holes (assuming those holes go all the way through.) I think you'd find that the rear holes don't have a heck of a lot of clearance from the hull.

Two solutions for the handle. 1) You can reverse the pump/bowl mounting and have the handle on the "left" side, or 2) You can cut the handle to shorten it. I chose to shorten the handle by 2". Made a big improvement.

I agree with Gary. With the slope of the hull, I think you'd be hard pressed to get an additional inch or two max, and you've have an ugly mess to fix.

Thanks for the comments. The front of the "step" is 7" off the floor and about 12" deep. Looks like there would be plenty of room. The discharge and lever would be over the original surface. I may have to mount it a bit forward but it is a larger bowl anyway. Not convinced either way yet.
We had a Raritan in our C30, a big improvement over the HF we have now. So may still go that way or a Baby Blake?
