proper engine temp

First what happend,then my question.After 11 days of sailing Lake Michigan about a quater mile from dock I noticed what I thought was smoke coming out from my engine after near panic discoverd it was steam from , water was hitting the hot engine from a leak from a cooling hose.Make a long story short the problem was corrected.To make sure this never happens again any recomdations on a secondary engine temp monitoring gage my gage is down by my left ankle .What is optimum runnung temp any suggestions on checking for proper running temp ,and ideas on a second gauge
I have 1998 catalina with a 25 horse universal

Our cockpit panel is down by my left kneecap. I just keep looking at the temperature gauge, and have gotten into a regular habit of doing so. I can't hear alarms worth a hill of beans when the engine is running!:)
