I don't think there is a way to "set" it either forward or back. Some tach's only increment hours while receiving pulses from the alternator or magnetic pickup. you could probably design a simple circuit to power and pulse the tach - it would take 70 over 23 days to get to your 560 hours. if yours only requires a power connection to run the clock - then a simple jumper between the hot side of the key switch to the tach power would get you going.
The simple way is to note it in the log book and leave as is. My log is an excel spread sheet so it would be easy to track engine hours with gage offsets when tach is changed or non-op. My Noland RS11 keeps track of engine hours for me and is completely programmable from the setup screen. I've have not yet tried to set it to the current value on the tach.
